1 oz butter 2 small Onions 1lb Pumpkin flesh,chopped 2 pints chicken or veg stock half tsp salt 1 Celery stalk,trimmed and chopped 1 large Potato,peeled and chopped 1 tsp lemon juice couple of dashes of tabasco 1 tsp Paprika 8 floz of double cream
In a large heavy saucepan, melt the butter over mod. heat. Add Onions and Pumpkin cook until Onions are soft but not brown, about 5 mins should do it.Stir in stock,salt, Celery, Potato, lemon juice, tabasco and Paprika. Bring to the boil and simmer until all the veg is nice and tender. remove from the pan and either put in a blender or through a sieve,I use a blender.Put it all back in the saucepan and add the cream, heat until very hot but no need to boil,serve into warmed bowls,you can add some chopped Parsley to each bowl or whatever Herb takes your fancy. This soup is a lovely colour and tastes delicious ;D
