Tuna Quiche
Ingredients
• 2 6-oz. cans water-packed tuna, drained
• 1/4 medium onion, finely chopped
• 1 cup shredded Swiss cheese
• 1 9-inch pie crust, unbaked
• 3 eggs
• 1 cup mayonnaise
• 1 cup half-and-half
Preparation
Preheat oven to 375F. Layer tuna, onion and cheese on pie crust. In a bowl, mix eggs, mayo and half-and-half, using a wire whisk, until smooth. Pour over top of ingredients in pie crust. Make sure liquid reaches bottom of crust (i.e., lift tuna if necessary to allow liquid to reach bottom). Discard any extra liquid. Bake quiche 45-50 minutes.
Tuna Bean Spread
Ingredients
• 1 15-oz. can pinto beans, drained and rinsed
• 1 6 1/8-oz. can tuna, water packed, drained
• 1 green pepper, chopped
• 2 scallions, chopped
• 1 teaspoon sugar
• 1 tablespoon horseradish
• 1/2 teaspoon black pepper
• 1 tablespoon mayonnaise
Preparation
Using a fork, mash beans in a medium bowl. Add remaining ingredients and mix well. Chill. Serve on bread or in a pita pocket. Makes 4 servings.
Curried Tuna and Pasta Salad
Ingredients
• 1 cup corkscrew pasta, cooked and drained
• 1 medium red apple, cored and chopped
• 2 stalks celery, sliced diagonally
• 1 6 1/2-oz. can water-packed tuna, drained
• 1/2 cup nonfat, plain yogurt
• 1 tablespoon spicy mustard
• 1 tablespoon curry powder
Preparation
Place pasta, apple, celery and tuna in a serving dish; toss gently. Mix yogurt, mustard and curry powder to form a dressing. Fold dressing into tuna mixture and coat well. Chill before serving.
Deviled Tuna Bake
Ingredients
• 2/3 cup mayonnaise
• 2 tablespoons lemon juice
• 1/4 cup onion, chopped
• 2 teaspoons worcestershire sauce
• 2 teaspoons Dijon mustard
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 2 cups flaked tuna
• 2 slices bread, crumbled
• 2 hard-boiled eggs, sliced
• 6 tablespoons crushed corn flakes
• 3 tablespoons Parmesan cheese, grated
• 3 tablespoons butter, melted
Preparation
Set oven to broil. Mix together first seven ingredients, then add tuna, bread and eggs. Spread onto baking sheet. Mix together crushed corn flakes, Parmesan and butter until crumbly. Sprinkle over top of tuna. Place under broiler for five minutes.
Spicy Tuna Patties
Ingredients
• 1 medium onion, chopped
• 2 garlic cloves, crushed
• 1 teaspoon cumin
• 1/4 teaspoon coriander
• 1/2 teaspoon cayenne pepper
• 1/2 teaspoon dry mustard
• 2 eggs, beaten
• 2 6-oz. cans tuna fish
• 1/2 cup cracker crumbs
• 1 tablespoon parsley
• 1 teaspoon lemon juice
• 2 tablespoons flour
• Salt
• Pepper
Preparation
In a skillet, saute onions until soft, then add garlic and seasonings. Add final seven ingredients to mixing bowl and mix thoroughly. Pour into bowl the sauteed onions mixture and combine well. Form mixture into patties. Fry in skillet with oil until browned.

Ingredients
• 1 cup elbow macaroni, uncooked
• 2 6-oz. cans tuna, water-packed, drained
• 4 hard boiled eggs, diced
• 1/4 cup celery, chopped
• 3/4 cup carrots, grated
• 1/2 cup salad dressing, mayonnaise-style
• 2 tbsp onion, minced
• 1/4 tsp pepper
Preparation
Bring water to boil in large saucepan. Cook macaroni until tender, approximately 6-8 minutes, and drain well. In a large bowl, combine tuna, macaroni, eggs, celery and carrots. In another bowl, stir together salad dressing, onion and pepper. Spoon dressing mixture over tuna and macaroni mixture. Toss until ingredients are evenly covered with dressing. Chill.

• 2 6.5-oz. cans tuna, water-packed, well-drained.
• 1/2 cup zucchini, chopped
• 1/4 carrots, sliced
• 1/3 cup onion, diced
• 1/4 cup salad dressing, mayonnaise-style
Preparation
Cook pasta according to package directions and drain. Mix tuna, macaroni and vegetables in mixing bowl. Stir in salad dressing and coat well. Chill.
