I have recently found out I cannot eat wheat this means re-thinking most things I eat. This even includes some chocolate bars as some have biscuit in them. Bread is something that is a real headache. So any ideas would be great especially if there is anyone else out there who also has this problem. Finding recipes that work is aproblem as most that I have found contain ingredients I cannot obtain like Xantham Gum, I cannot seem to get hold of it here in the UK, same goes for Guar Gum.Tapioca flour is another that seems short on the ground here I asked for it in a health food store and got blank looks. So any help would be lovely.

Are you able to eat Rice and rice floor products?
And then there is corn meal and I seem to remember that they were doing something with potatos

I can eat: Rice flour, Maize flour, Soya flour, Potato flour. I can also eat oats. I cannot eat anything that has Wheat in it.
Bread is a big problem trying to get a recipe that works the last one I tried was a disater. I can but gluten free bread but it is expensive. So I want to make my own it has to be cheaper if I can get a recipe that actually works.

Wulfcwen, Here are a couple recipes to making the flour. Hope this helps. Gluten-Free Flour Mix Preparation time approximately ten minutes. Yield: 3 cups GF mix 2 cups white rice flour 1/3 cup tapioca flour 2/3 cup potato starch flour (not plain potato flour) Yield: 9 cups GF mix 6 cups white rice flour 1 cup tapioca flour 2 cups potato starch flour (not plain potato flour) Combine all the ingredients in a large bowl and mix thoroughly. Sift the mixture into a large air-tight container. Store in a container with a tight lid. Use as a substitute for white wheat flour. Flour Mix #2 Preparation time approximately ten minutes. 1 lb. barley flour contains gluten 1 lb. potato starch flour (not plain potato flour) 1 lb. fine-ground maize flour 6 tsp. bread soda 3 tsp. cream of tarter Combine all the ingredients in a large bowl and mix thoroughly. Sift the mixture into a second bowl to remove all lumps and distribute the leavening evenly. Sift the mixture a second time into a large air-tight container. Store in a container with a tight lid. Yield 3 lbs. wheat-free flour mix. * Caution: Read labels. * Some products have hidden wheat or gluten ingredients. **from pamelajoy.com/wheatfree/recipes/flour.php

Brilliant thank you I will have to try and get the potato starch flour. I may have to get some things off the internet as I get blank looks when I ask for some things in my local Health food shop.

All of those things are available at our local grocery stores, if you don't see ask and they will bring it in

I wish they would it has been a battle to get them to stock what they call Free From Range. All you get is 'There is not enough demand madam' So we have to go to Health food shops or get it online. Even the celiac support groups cannot get the supermarkets to stock what they need it is a real hard slog to get things done. So I am looking around in towns close to us to see if they any other health food shops that supply what I need.
I will take a look when we are holiday as well we are going to Yorkshire so I will see what they have. If they have what I need I will stock up on stuff nad see if they can post on what I want as well.
I made a lovely meal last night with gluten free tortilla wraps, I made a Lasagne without the lasagne I used the wraps instead. DH loved it and asked if there was more so that is going on the menu for sure.

What about flax? I should think it would be easier to come by at your local health food shop? Flax can be tricky to work with but if you are having that much problems with wheat it would behoove you to not investigate further .
