I saw this and participated in a thread on several other sites. It was always fun and a chance to share some recipes.
As my wife is away for a while, I've been cooking for myself. She's a meat and potatoes cook while I like sauces, spices, etc. So when she's away, I get control of the kitchen and tend to blow the budget...
Today for lunch I had an Emmontaller sandwich. A thick slice of Tuscany bread (toasted), whole grain Dijon Mustard, Corned Beef or Pastrami, sauerkraut, top with Emmental cheese and under the broiler until it's all melted and runny. Greek salad goes nice with this.

Ah well. When I want to do the fast and easy I tear up some Romain Lettice, top it with a four bean salad, sliced avacado, and what ever dressing looks good at the time.
If you don't eat pork, I like a lamb loin as well It gets a bit more complicated if you don't eat meat... ;D

Ohhh Watershield. Husband can fend for himself but I won't eat his cooking. ;D Tonight I am having brown rice with some steamed green beans, cauliflower, and carrots with a small grilled boneless pork chop. This is a typical meal for me.

A bit chilly out today, so we need something warm the soul and stick to the bones.
Good hearty beef stew tonight, lots of gravey. Poured over a thick piece of sour dough bread.

I don't eat meat, so I can't try many of those recipes!
Tonight I'm going to make a big pot of creamy, spicy veggie curry. There's gonna be heaps, so you're all invited. <Grin>

If your not into meat, try some Pasta E Figioli
Pasta E Fagioli
* 2 cups cannellini beans (480ml) * 3 oz pancetta, diced (80g) * 0.4 lb. spaghetti (200g) * 1 x small celery stalk, finely chopped * 1 x small carrot, finely chopped * 1 x small red onion, finely chopped * 2 cloves garlic, finely chopped * 3 x fresh sage leaves * sprig of fresh rosemary * fresh parsley, finely chopped * 4 1/4 cups water (1 litre) * 1/2 cup freshly grated parmigiano cheese * 4 tbsp extra virgin olive oil (60ml), plus extra for drizzling * salt and pepper to season
Directions: Pasta E Fagioli
1. In a large pot, heat up extra virgin olive oil and sauté garlic, onion, carrot, celery, pancetta for 5 minutes. Add fresh sage and rosemary, allowing the olive oil to absorb the flavours of the herbs. 2. Add beans and cook for a few minutes. With the back of a fork, mash up 1/4 of the beans and add a cup of water. Break uncooked spaghetti into thirds using your hands and add into pot. Stir for about a minute. Add the remaining water and bring to a boil. Cook for about 15 minutes, allowing the water to reduce until it becomes a thick consistency. 3. Let rest for 10 minutes off the heat. Add freshly grated parmigiano and finish with a drizzle of extra virgin olive oil. Serve warm.

Am just off to make some home-made watercress soup. It's easy peasy. Just get yourself plenty of fresh watercress and some peeled and chopped potatoes. Throw these in the blender along with some spinach. When it's roughly pureed (but not totally liquified) - pop it in a pan. When it's hot serve it up with cream and black pepper.
Loooooooooovely.
