Those look like very interesting recipes
I note that once the mix is starting to ferment there is no process to ensure the yeast is dead after fermentation. Those look to be fairly large yields. So unless you plan to do a lot of drinking, I'd scale back on the quantities.
I'd also ask a brew store about "knocking down" the mix before bottling. In wine making there are a couple of chemicals we use to be sure the fermentation does not restart in the bottle. (beer is ok as thats what gives it the bubbles, you add 1 gram of sugar to each bottle and cap it)
After the active bubbling stops, the fermentation process is finished and the product should be ready to filter and bottle. (that could take a while. That's a lot of sugar to burn) Remember that sterilization of bottles etc is critical to prevent mold growth.

MM Everyone, Methinks I will have to do a lot of research to be able to make (or should it be 'brew') mead! I have never brewed anything in my life, apart from the occasional tea! Never imagined that it would be that complicated! But hey I will try anything once. Thanks for the great advice and also the links. will let you all know how I get on! Brightest Blessings. Fizban

The problem with making Mead for the last year and even now, is the decline in the Honey Bee population due to a nasty virus that has attacked them worldwide. Until that virus 'fizzles out - which all do eventually, I'd say buy it from a shop, it was probably made years ago before the virus began.

This weekend I am bottling up our mead that has been merrily bubbling away since summer and then leaving it to stand and rest ready for Yule that is if we can resist it.
But then it would be wrong not to try some before it is bottled, don't you think?lol lol
