All you need:

Some clean jars
Some rhubarb (however much you have)
Some sugar (add to taste)
A little water.
Vanilla essence (if liked)

This is so simple, yet so yummy.

Chop your rhubarb into little chunks and place in a saucepan. Add a little water (around 4 tablespoons) and the sugar.

Bring to the boil, and boil steadily for 10-15 minutes (no thermometer needed).

Add vanilla essence (if desired) and leave to cool for around 10-15 minutes and pour into the clean jars. Keeps well in the fridge for about 2-3 weeks.

Delicious on toast, ice-cream or topped with sponge mixture and baked in the oven or microwave.

I LOVE Rhubarb, but I just can't get it here, looked and looked. I'm gonna ask my son to bring some back when he comes home from his holidays. Goth this recipe sounds wonderful ;D

I made some lavender cookies once ~ tasted like something you'd clean the toilet with LOL ;D Good suggestion though...someone may like it.
